Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • 1 ½ teaspoons baking powder
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 2 tablespoons whole milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • various food coloring For frosting.

Instructions
 

  • Preheat the oven to 350°F (175°C). Line the cupcake tin with cupcake liners.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, and mix until just combined.
  • Divide the batter evenly into the cupcake liners, filling each about ⅔ full.
  • Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the tin for 5 minutes, then transfer to a cooling rack to cool completely.
  • While the cupcakes are cooling, prepare the frosting. In a large bowl, beat the softened butter until creamy, then gradually add the powdered sugar, mixing on low speed. Add the milk and vanilla extract, and mix until light and fluffy.
  • Divide the frosting into bowls and add food coloring to achieve desired colors. Mix well.
  • Once the cupcakes are completely cool, frost them using piping bags or a spatula. Decorate with your choice of edible decorations.
  • Serve and enjoy your festive Easter cupcakes!

Notes

The cupcakes can be made a day in advance and stored in an airtight container.
