Equipment

  • 2 round 9-inch cake pans
  • 1 mixing bowl
  • 1 electric mixer
  • 1 spatula
  • 1 measuring cups and spoons
  • 1 toothpick for testing doneness
  • 1 wire cooling rack

Ingredients

  • 2 ¾ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • as needed food coloring (blue or pink) Depending on the gender
  • 2 cups frosting (cream cheese or buttercream) Your choice
  • as needed edible decorations (like sprinkles) For Easter theme

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour the two 9-inch round cake pans.
  • In a mixing bowl, combine the flour, baking powder, and salt. Whisk until blended.
  • In another large mixing bowl, beat the softened butter and sugar together using an electric mixer until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk, and mix until just combined.
  • Divide the batter equally into two bowls. Color one bowl of batter with blue or pink food coloring to reveal the gender.
  • Pour the colored batter into one of the prepared cake pans. Pour the uncolored batter into the second pan.
  • Bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire cooling rack to cool completely.
  • Once cooled, place the blue or pink cake layer on a serving plate, then spread frosting on top. Add the uncolored cake layer, then frost the top and sides of the entire cake.
  • Decorate with Easter-themed sprinkles and any desired edible decorations.

Notes

To enhance the surprise element, you can fill the center of the cake with colored candies (blue or pink) that represent the baby’s gender.
Ensure that the cakes are completely cool before frosting to prevent melting the frosting.
Feel free to use a box cake mix instead of homemade batter for a quicker option. Just follow the package instructions and add food coloring accordingly.
