Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • optional fresh berries (strawberries, blueberries, raspberries) or chocolate shavings For topping.

Instructions
 

  • In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix well until the crumbs are evenly coated.
  • Press the mixture firmly into the bottom of the springform pan to form a dense crust. Place the pan in the refrigerator to chill while preparing the filling.
  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Gradually add in the powdered sugar and vanilla extract, mixing until fully combined and smooth.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until well combined, being careful not to deflate the whipped cream.
  • Pour the cheesecake filling over the chilled crust, smoothing the top with a spatula.
  • Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight, allowing it to set.
  • Once set, run a knife around the edge of the springform pan and carefully remove the sides.
  • Top with fresh berries or chocolate shavings, if desired, before slicing into pieces and serving.

Notes

For added flavor, you can mix in lemon or orange zest into the cheesecake filling.
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
This cheesecake can be made a day in advance, making it a convenient option for Easter gatherings.
