Ingredients
  

  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • ½ cup unsalted butter
  • ½ cup peanut butter
  • 3 cups quick-cooking oats
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • ½ cup chopped nuts optional
  • ½ cup mini chocolate eggs or any Easter-themed candy

Instructions
 

  • In a medium saucepan, combine granulated sugar, cocoa powder, and unsalted butter. Cook over medium heat, stirring frequently until the butter is melted, and the mixture is well combined.
  • Allow the mixture to come to a gentle boil for about 1 minute, then remove it from heat.
  • Stir in the peanut butter until it's fully melted and smooth. Mix in the vanilla extract and a pinch of salt.
  • In a mixing bowl, combine the quick-cooking oats and, if using, chopped nuts. Pour the chocolate-peanut butter mixture over the oats and stir until everything is well coated.
  • Add the mini chocolate eggs to the mixture and gently fold them in.
  • Line a baking sheet with parchment paper. Using a spoon or your hands, drop spoonfuls of the cookie mixture onto the parchment paper, shaping them into cookies.
  • Once all cookies are formed, place the baking sheet in the refrigerator for about 30 minutes to allow the cookies to firm up.
