In a medium saucepan, combine granulated sugar, cocoa powder, and unsalted butter. Cook over medium heat, stirring frequently until the butter is melted, and the mixture is well combined.
Allow the mixture to come to a gentle boil for about 1 minute, then remove it from heat.
Stir in the peanut butter until it's fully melted and smooth. Mix in the vanilla extract and a pinch of salt.
In a mixing bowl, combine the quick-cooking oats and, if using, chopped nuts. Pour the chocolate-peanut butter mixture over the oats and stir until everything is well coated.
Add the mini chocolate eggs to the mixture and gently fold them in.
Line a baking sheet with parchment paper. Using a spoon or your hands, drop spoonfuls of the cookie mixture onto the parchment paper, shaping them into cookies.
