Ingredients
  

  • 500 g bread flour
  • 350 g water (warm)
  • 100 g active sourdough starter
  • 10 g salt
  • 30 g honey (or maple syrup)
  • 1 egg for egg wash (optional)

Instructions
 

  • In a mixing bowl, combine the active sourdough starter, warm water, and honey. Stir until well mixed.
  • Add the bread flour and salt to the mixture. Use a bench scraper to mix until it forms a shaggy dough.
  • Cover the bowl with a damp cloth and let it rest for 30 minutes. This is known as the autolyse step.
  • After 30 minutes, begin kneading the dough in the bowl or on a lightly floured surface for about 10 minutes, until it becomes smooth and elastic.
  • Transfer the dough into a lightly greased bowl, cover it, and let it rise at room temperature for about 2 hours, or until doubled in size.
  • After the first rise, gently deflate the dough and shape it into a round loaf. Place it seam-side up in a proofing basket lined with a cloth.
  • Cover with a cloth and let it proof for another hour.
  • Preheat your oven to 450°F (230°C) about 30 minutes before baking. If using a Dutch oven, place it inside to heat.
  • Once the dough has risen, carefully turn it out onto parchment paper and score the top with a sharp knife or blade.
  • If using a Dutch oven, carefully place the dough into the pot and cover with the lid. If baking directly on a stone or sheet, place the loaf on the preheated surface.
  • Bake for 30 minutes with the lid on (or until the crust starts to color if using a stone), then remove the lid and bake for an additional 15 minutes, until golden brown.
  • Use a thermometer to ensure the internal temperature reaches about 200°F (93°C).
  • Remove the bread from the oven and let it cool on a wire rack for at least 1 hour before slicing.

Notes

For a decorative touch, you can add dried fruits such as raisins or cranberries to the dough during the mixing stage.
This bread can be stored at room temperature for a few days or frozen for longer storage. Just wrap it tightly in plastic wrap.
