Line a baking sheet with parchment paper to prevent the cookies from sticking.
In a double boiler or microwave-safe bowl, melt the milk chocolate chips and creamy peanut butter together, stirring until smooth. Be careful not to overheat; if using the microwave, heat in 30-second intervals, stirring in between.
Once the chocolate mixture is melted and smooth, remove it from heat. Add the crispy chow mein noodles to the bowl and stir gently until the noodles are fully coated with the chocolate mixture.
Using a spoon, drop spoonfuls of the chocolate noodle mixture onto the prepared baking sheet. Use the back of a spoon to gently create a nest shape in the center of each mound.
While the mixture is still warm and pliable, press 2-3 pastel candy eggs into the center of each nest.
Place the baking sheet in the refrigerator for about 10-15 minutes, or until the chocolate hardens.
Once the nests are set, remove them from the refrigerator and serve your delightful Easter treats!
If desired, drizzle melted white chocolate on top for additional color and flavor after they have set.
