Instructions
Mix ½ cup sugar with 2 teaspoons cinnamon in a bowl and set aside for coating.
In a saucepan, combine 2 tablespoons sugar, 2 tablespoons vegetable oil, ½ teaspoon salt, and 1 cup water. Bring to a boil.
Remove from heat and stir in 1 cup flour all at once. Stir until a dough ball forms.
Transfer dough to a piping bag with star tip or sealable bag with snipped corner.
Heat 4 inches of vegetable oil in a pot with thermometer to 350°F (180°C).
Pipe 1-inch pieces of dough into hot oil using scissors to cut. Do not overcrowd.
Fry 2–3 minutes until golden brown on all sides, flipping occasionally.
Remove with slotted spoon and place on paper towel-lined sheet.
Toss warm bites in cinnamon sugar mix and serve immediately.
Notes
For crispier results, make sure oil stays at 350°F and drain bites well on paper towels.
