Churro Dough and Coating

  • ½ cup sugar for dough
  • 2 tablespoons sugar for coating
  • 2 teaspoons ground cinnamon
  • 2 tablespoons vegetable oil plus more for frying
  • ½ teaspoon salt
  • 1 cup water
  • 1 cup all-purpose flour

  • Mix ½ cup sugar with 2 teaspoons cinnamon in a bowl and set aside for coating.
  • In a saucepan, combine 2 tablespoons sugar, 2 tablespoons vegetable oil, ½ teaspoon salt, and 1 cup water. Bring to a boil.
  • Remove from heat and stir in 1 cup flour all at once. Stir until a dough ball forms.
  • Transfer dough to a piping bag with star tip or sealable bag with snipped corner.
  • Heat 4 inches of vegetable oil in a pot with thermometer to 350°F (180°C).
  • Pipe 1-inch pieces of dough into hot oil using scissors to cut. Do not overcrowd.
  • Fry 2–3 minutes until golden brown on all sides, flipping occasionally.
  • Remove with slotted spoon and place on paper towel-lined sheet.
  • Toss warm bites in cinnamon sugar mix and serve immediately.

Notes

For crispier results, make sure oil stays at 350°F and drain bites well on paper towels.
