Preheat oven to 350°F and lightly grease a 9x13-inch baking dish using butter or non-stick spray.
Mix ½ cup sugar with 2 tablespoons cinnamon in a small bowl to create the cinnamon sugar mixture.
Unroll one can of crescent rolls and press into the bottom of the dish, sealing seams.
Sprinkle half of the cinnamon sugar mixture evenly over the dough layer.
In a bowl, beat together the softened cream cheese, ½ cup sugar, egg, and vanilla extract until smooth.
Carefully spread the cream cheese mixture over the dough and cinnamon layer.
Unroll the second can of crescent rolls and layer on top, sealing seams.
Sprinkle remaining cinnamon sugar mixture evenly over the top layer.
Bake in preheated oven for 30 minutes until golden on top and cheesecake is set.
Let cool completely before slicing into bars and serving.
Notes
For cleaner bars, chill in the fridge for an hour before slicing. Reheat in microwave or oven for warm flavor!
