  • 1 prepared 8" pie crust graham cracker, cookie crumb, or traditional
  • 5 ounces semi sweet or dark chocolate baking bar
  • ¼ cup butter
  • 3 tablespoons light corn syrup
  • 3 eggs beaten
  • cup brown sugar
  • 1 teaspoon vanilla
  • whipped cream for topping

  • Preheat your oven to 350°F (175°C).
  • In a saucepan, melt 3 oz of chocolate, butter, and corn syrup on low heat, stirring until smooth.
  • Remove from heat. Stir in beaten eggs, brown sugar, and vanilla until well combined.
  • Pour the chocolate mixture into the prepared pie crust and spread evenly.
  • Bake for 30 minutes, or until filling is set and slightly puffed.
  • Remove from oven and let cool completely.
  • Top with whipped cream before serving. Optional: shave remaining 2 oz chocolate over the top.

Notes

Store tightly wrapped at room temperature for up to 1 day, or refrigerate for up to 4 days. For longer storage, freeze wrapped in plastic and foil for up to 2 months.
