Preheat your oven to 400°F (200°C) or heat a skillet over medium-high heat.
In a mixing bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, pepper, and lemon juice (if using). Mix well to create a marinade.
Add the lamb chops to the bowl and coat them generously with the herb mixture. Let them marinate for at least 10 minutes (or longer for more flavor).
If using an oven, place the marinated lamb chops in a baking dish. If using a skillet, add them directly to the hot skillet.
Cook the lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Use a meat thermometer for accuracy; medium-rare should be around 135°F (57°C).
Once cooked, remove the lamb chops from heat and let them rest for about 5 minutes before serving.
Serve with a side of roasted vegetables or a fresh salad for a complete meal.
