Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (15 ounces) diced tomatoes with green chilies, undrained
  • 1 cup frozen mixed vegetables (peas, corn, carrots) You can customize the vegetables based on what you have on hand.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef with the chopped onion and minced garlic until the beef is browned and the onions are translucent. Drain any excess fat.
  • In a large mixing bowl, combine the cooked beef mixture with uncooked rice, beef broth, diced tomatoes, frozen mixed vegetables, salt, pepper, and Italian seasoning. Stir until well combined.
  • Pour the mixture into a greased 9x13-inch casserole dish, spreading it evenly.
  • Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes.
  • Remove the foil, stir the casserole gently, and sprinkle the shredded cheddar cheese on top.
  • Return to the oven and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving.

Notes

You can easily customize the vegetables based on what you have on hand.
For added flavor, consider adding some chopped bell peppers or using seasoned diced tomatoes.
This dish can be prepared ahead of time and stored in the refrigerator before baking. Just add a few more minutes to the cooking time.
