Instructions
Preheat oven to 375°F while prepping filling.
Clean mushrooms with a damp towel, remove stems and mince them finely.
In skillet over medium heat, sauté diced onions and minced mushroom stems in olive oil for 5 minutes.
Add garlic and cook 1 more minute until fragrant. Add ground beef, salt, and pepper. Brown until cooked through.
Let mixture cool slightly. Stir in panko, shredded mozzarella, and egg until fully combined.
Fill mushroom caps with beef mixture, arrange on lined baking sheet.
Top each stuffed mushroom with extra mozzarella.
Bake for 20–25 minutes until cheese is bubbly and golden and mushrooms tender.
Serve immediately or store as directed.
Notes
Cool mushrooms before storing. Can refrigerate up to 3 days or freeze for later. Reheat in oven or microwave.
