Ingredients
  

  • 12 ounces pasta e.g., pasta of your choice, such as penne or fusilli.
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 bell pepper diced any color.
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 2 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • ¼ cup grated Parmesan cheese optional.
  • for garnish fresh basil leaves optional.

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the diced onion and sauté until softened, about 3-4 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the zucchini, bell pepper, cherry tomatoes, and broccoli to the pot. Sauté for about 5 minutes until the vegetables begin to soften.
  • Stir in the pasta, vegetable broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  • Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer for about 10-12 minutes, stirring occasionally until the pasta is cooked and the liquid is mostly absorbed.
  • Remove the pot from heat and, if desired, stir in grated Parmesan cheese for added flavor.
  • Serve hot, garnished with fresh basil leaves if using.

Notes

Feel free to customize the vegetables based on what you have available or prefer.
For a protein boost, consider adding cooked chicken, shrimp, or chickpeas.
This dish can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave before serving.
