  • 1 lb Ground beef fresh or fridge cold
  • 1 can Red kidney beans drained and rinsed
  • 1 can Ro-Tel tomatoes
  • ½ cup Uncooked rice any type
  • 2 tablespoons Chili powder
  • 1 cup Shredded cheddar cheese
  • 1 cup Water

  • Set pressure cooker to sauté mode and brown the ground beef until no pink remains, breaking it up as it cooks.
  • Drain any excess grease from the cooked beef.
  • Add beans, Ro-Tel tomatoes, uncooked rice, chili powder, and water. Stir to combine and scrape bottom to prevent sticking.
  • Lock the lid, set valve, and cook under pressure for 8 minutes. Let pressure release naturally for 10 minutes, then quick release.
  • Sprinkle cheddar cheese on top, close lid for a few minutes until melted. Serve hot.

Notes

Delicious served with corn or tortilla chips. Adjust chili powder to taste.
