Ingredients
  

  • 12 oz penne pasta
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 1 tablespoon taco seasoning
  • 1 cup corn frozen or canned
  • 2 cups shredded cheese cheddar or Mexican blend
  • to taste salt
  • to taste pepper
  • for garnish fresh cilantro optional

Instructions
 

  • In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  • In the same pot, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the diced red and yellow bell peppers to the pot. Cook for another 5 minutes until the peppers are tender. Stir in black beans, enchilada sauce, taco seasoning, and corn. Season with salt and pepper as desired.
  • Add the cooked pasta to the pot, mixing well to combine all the ingredients. If the mixture is too thick, you can add a little water or broth to loosen it.
  • Sprinkle 1 cup of shredded cheese over the pasta evenly, stirring gently to incorporate some cheese into the mix. Reserve the remaining cheese for topping.
  • If you want a baked version, preheat the oven to 350°F (175°C) and transfer the pasta mixture into an oven-safe dish. Sprinkle the remaining cheese on top and bake for 15-20 minutes, or until the cheese is bubbly and golden.
  • Remove from the heat and let cool for a few minutes. Garnish with fresh cilantro if desired, and serve immediately.

Notes

Feel free to customize this recipe by adding cooked chicken, ground beef, or sautéed mushrooms for additional protein.
You can use whole-wheat pasta for a healthier option.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove.
