Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs Approximately 1.5 pounds.
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • optional pieces fresh parsley for garnish

Instructions
 

  • Preheat your oven to 300°F (150°C).
  • In a large Dutch oven, heat a drizzle of oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent (about 3-4 minutes).
  • Remove the onion and garlic from the pot and set them aside. In the same pot, add the chicken thighs, skin side down, and sear them for about 5 minutes until golden brown. Flip and brown the other side for another 5 minutes.
  • Once the chicken is browned, remove it from the pot and set it aside.
  • Add the rice to the pot and stir for a minute to toast it slightly.
  • Mix in the cream of mushroom soup, chicken broth, sautéed onions, and garlic. Stir well to combine, making sure no rice is stuck to the bottom.
  • Season the mixture with paprika, thyme, black pepper, and salt.
  • Place the chicken thighs skin side up on top of the rice mixture, cover the pot with its lid, and transfer it to the preheated oven.
  • Bake for 2 hours without removing the lid.
  • After cooking, remove the pot from the oven, let it rest for a few minutes, and then serve hot, garnished with fresh parsley if desired.

Notes

For a healthier version, you can use skinless chicken thighs or breasts, although the cooking time may vary slightly.
Feel free to add vegetables like peas or carrots for an extra nutritional boost.
This dish can also be made in a slow cooker for a more hands-off approach.
