  • Preheat oven to 325°F. Prep ramekins and set water bath ready.
  • Heat milk, cream, and cocoa powder in saucepan. Stir gently until smooth and warm. Remove from heat.
  • Whisk eggs, sugar, vanilla, and salt in separate bowl until smooth.
  • Slowly whisk warm chocolate mix into egg mixture to combine.
  • Strain mixture through sieve into measuring cup or bowl.
  • Pour strained batter into ramekins evenly.
  • Place ramekins in dish and pour hot water halfway up sides.
  • Bake flan for 30 minutes until edges are firm and center slightly jiggly.
  • Cool at room temperature, then refrigerate at least two hours before serving.
