Instructions
Preheat the oven to 375°F.
Season the chicken with seasoning salt.
Sear chicken in olive oil in a large oven-safe Dutch oven over medium-high heat until golden brown. Remove and set aside.
In the same pan, sauté garlic for 30 seconds. Add more oil if needed.
Deglaze with white wine, scraping the bottom of the pot.
Add caramelized onions, both broths, and orzo. Stir everything together.
Add the chicken back in. Bring to a simmer.
Cover with lid or foil and bake in the oven for 20-25 minutes until orzo is tender.
Remove from oven and stir in shredded cheese until melted and creamy.
Top with fresh thyme and serve hot.
Notes
Store leftovers in the fridge up to 4 days or portion and freeze. Add a splash of broth when reheating for best texture.
