  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 6 ounces fresh spinach chopped
  • 1 cup milk
  • 8 ounces white American cheese cubed
  • 4 ounces cream cheese cubed
  • ¼ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • salt and pepper to taste

  • Heat olive oil in pressure cooker on sauté setting.
  • Add minced garlic and sauté until fragrant and golden, about 1 minute.
  • Stir in the chopped spinach and cook until tender and wilted, about 3-4 minutes.
  • Pour in milk and bring to a gentle simmer.
  • Add cubed white American cheese and cream cheese. Stir constantly until melted smooth.
  • Add cumin, chili powder, and salt and pepper to taste. Stir to combine.
  • Close lid and pressure cook for 5 minutes. Use quick release when finished.
  • Open lid, stir gently, and serve the dip warm with chips or veggies.

Notes

Store leftovers in an airtight container and reheat with a splash of milk. For freezing, thaw overnight and reheat gently.
