Heat olive oil in pressure cooker on sauté setting.
Add minced garlic and sauté until fragrant and golden, about 1 minute.
Stir in the chopped spinach and cook until tender and wilted, about 3-4 minutes.
Pour in milk and bring to a gentle simmer.
Add cubed white American cheese and cream cheese. Stir constantly until melted smooth.
Add cumin, chili powder, and salt and pepper to taste. Stir to combine.
Close lid and pressure cook for 5 minutes. Use quick release when finished.
Open lid, stir gently, and serve the dip warm with chips or veggies.
Notes
Store leftovers in an airtight container and reheat with a splash of milk. For freezing, thaw overnight and reheat gently.
