Start by washing the baby potatoes thoroughly and halving them. Set them aside.
In a large skillet, boil water with a pinch of salt and add the baby potatoes. Cook them for about 10 minutes until fork-tender, then drain and set aside.
In the same skillet over medium-high heat, melt 2 tablespoons of butter.
Once the butter is melted, add the steak bites to the skillet. Season with salt, black pepper, and paprika. Sear the steak bites for about 3-4 minutes until browned on all sides but still medium-rare. Remove them from the skillet and let them rest.
In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
Add the boiled baby potatoes to the skillet, stirring them into the garlic butter, and sauté for another 3-4 minutes until they are crispy.
Return the steak bites to the skillet, tossing everything together to combine. Cook together for an additional 1-2 minutes to heat through.
Remove from heat and garnish with chopped parsley before serving.
