Ingredients
  

  • 1 lb chicken breast, diced
  • 16 oz potato gnocchi
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley optional

Instructions
 

  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the chicken broth and heavy cream to the skillet, stirring to combine. Bring the mixture to a simmer.
  • Gently add the gnocchi to the skillet. Cook according to package instructions, usually about 3-5 minutes, or until they float to the top.
  • Stir in the fresh spinach and grated Parmesan cheese, allowing the spinach to wilt and the cheese to melt into the sauce. Adjust seasoning with salt and pepper as desired.
  • Once everything is well combined and heated through, remove from heat.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For a spicy kick, consider adding red pepper flakes to the dish.
You may substitute the chicken with shrimp or keep it vegetarian by adding more vegetables like bell peppers or mushrooms.
This dish is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
