Quick skillet meals are a staple for my busy family during the week. This easy and delicious dinner option delivers juicy chicken, crispy potatoes, and gooey cheese all in one pan—perfect for weeknights!
Preheat oven to 400°F (200°C). Wash and cube the potatoes into bite-size pieces.
Toss potatoes with olive oil, salt, pepper, garlic powder and paprika. Spread on a greased baking sheet and bake for 15 minutes.
While potatoes bake, heat butter in a skillet over medium heat. Add chicken cubes sprinkled with salt, pepper, paprika, onion powder and Italian seasoning.
Cook the chicken until browned and cooked through, about 7–10 minutes.
Add minced garlic during the last 2 minutes of cooking.
Push cooked potatoes to one side of the pan. Add the chicken on the other side.
Drizzle Buffalo Wild Wings Garlic Parmesan Sauce over chicken and potatoes.
Sprinkle shredded mozzarella cheese generously on top.
Return to oven and bake for 10 more minutes until cheese is melted and bubbly. Garnish with parsley if desired.
