  • 1 pound ground chicken
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs
  • 2 cloves garlic minced
  • 1 egg
  • 2 tablespoons fresh parsley chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup milk
  • 2 tablespoons olive oil

  • Grease your loaf pan or pressure cooker insert well so the meatloaf won’t stick.
  • In a large mixing bowl, combine ground chicken, Parmesan cheese, breadcrumbs, garlic, egg, parsley, salt, black pepper, and milk.
  • Mix gently until just combined, then place into a loaf pan and shape into a loaf.
  • Brush the top with olive oil.
  • Cook on high pressure for 20 minutes, then allow natural release for 10 minutes.
  • Quick release any remaining pressure, then let rest 5 minutes before slicing and serving.

Notes

Wrap leftovers tightly for refrigeration up to 3 days or freeze for up to a month. Reheat gently to maintain tenderness.
