Ingredients
  

  • 2 cups pasta (penne or rotini)
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease your baking dish with a little olive oil.
  • Cook the pasta in a large pot of salted boiling water according to package instructions, but reduce the cooking time by 2 minutes. Drain and set aside.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • In a mixing bowl, whisk together the heavy cream, chicken broth, Italian seasoning, salt, and pepper. Stir in the cooked chicken and ½ cup of the Parmesan cheese.
  • In your large mixing bowl, combine the drained pasta with the chicken mixture, ensuring all pasta is well coated.
  • Transfer the pasta and chicken mixture to the greased baking dish. Top with the remaining Parmesan cheese, mozzarella cheese, and evenly sprinkle breadcrumbs on top.
  • Bake in the preheated oven for 30 minutes, until the top is golden brown and bubbly.
  • Remove from the oven and let it cool for a few minutes before garnishing with fresh parsley. Serve warm.

Notes

For added flavor, you can include vegetables like spinach or broccoli in the mixture.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
This dish can be made ahead of time; simply assemble it and refrigerate until ready to bake. Add an extra 10 minutes to the cooking time if baking from cold.
