Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese Ensure it's gluten-free if needed.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried Italian herbs (oregano, basil, or parsley)

Instructions
 

  • Preheat your grill or oven to 400°F (200°C).
  • In a mixing bowl, combine olive oil, minced garlic, grated Parmesan cheese, salt, black pepper, and dried Italian herbs. Whisk until well combined.
  • Add the cubed chicken to the bowl, and toss to coat evenly in the marinade. Allow the chicken to marinate for at least 15 minutes.
  • Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
  • Place the skewers on the preheated grill and cook for approximately 10-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F/75°C).
  • If baking, arrange the skewers on a baking sheet and bake in the preheated oven for about 15 minutes, flipping halfway through, until the chicken is cooked through.
  • Remove the skewers from the grill or oven, and let them rest for a few minutes before serving.
  • Serve the Garlic Parmesan Chicken Skewers with lemon wedges on the side for an added zest.
