Combine oats, sweet potato, nut butter, ginger, agave, vanilla, and protein powder in a bowl.
Mix until sticky and dough-like. Use hands if needed.
Roll into tablespoon-sized balls with your palms.
Roll each ball in your chosen topping like coconut or seeds.
Line tray with parchment and chill balls for at least 30 minutes.
Notes
Store in fridge for up to 4 days or freeze. Reheat gently in pressure cooker on steam mode for best results.
