  • 1 cup Cooked sweet potato mashed; about one large spud
  • ½ cup Nut butter almond, peanut, or cashew
  • 1 pinch Fresh ginger grated
  • 1 tablespoon Agave nectar or honey natural sweetener
  • ½ teaspoon Vanilla extract
  • 1 tablespoon Skimmed milk powder or vanilla protein powder optional
  • Assorted coatings coconut flakes, linseeds, cocoa powder, sesame seeds, chopped nuts

  • Combine oats, sweet potato, nut butter, ginger, agave, vanilla, and protein powder in a bowl.
  • Mix until sticky and dough-like. Use hands if needed.
  • Roll into tablespoon-sized balls with your palms.
  • Roll each ball in your chosen topping like coconut or seeds.
  • Line tray with parchment and chill balls for at least 30 minutes.

Notes

Store in fridge for up to 4 days or freeze. Reheat gently in pressure cooker on steam mode for best results.
