Dough

  • 1 cup warm plant-based milk almond milk used
  • 1 tablespoon active dry yeast
  • 1 tablespoon baking powder
  • cup organic sugar
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 3 ½ cups gluten free flour blend

Apples

  • 5 medium apples peeled, cored, and cut into small chunks
  • ¾ cup sugar
  • ½ teaspoon salt
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • 1 teaspoon cinnamon

Glaze

  • 3 cups powdered sugar
  • 2 ½ tablespoons plant-based milk almond milk used
  • 1 tablespoon pure maple syrup
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

  • Dissolve yeast in warm plant-based milk in a large bowl and let sit for about 5 minutes until bubbly.
  • Beat in baking powder, sugar, salt, and cinnamon until combined.
  • Add flour a cup at a time until dough comes together. It will be slightly sticky.
  • Cover the bowl and let the dough rise in a warm place for 1 hour.
  • Cook apples in a frying pan with 1 inch of water over medium-high heat until softened, 8–10 minutes.
  • Add sugar, salt, nutmeg, ginger, and cinnamon. Continue cooking until most liquid evaporates. Cool.
  • Fold cooled apples into risen dough until evenly incorporated.
  • Divide dough into 15 pieces, flatten slightly on a parchment-lined tray.
  • Heat oil to 350°F in deep fryer. Fry fritters 2 minutes per side until golden brown.
  • Remove fried fritters to paper towel-lined plate to absorb excess oil.
  • Whisk powdered sugar, plant-based milk, maple syrup, salt, cinnamon, and vanilla for glaze. Dip warm fritters and let excess drip off on rack.

Notes

You can refrigerate the dough overnight for quicker fritters in the morning. Glaze them while still warm for best results. Store leftovers in an airtight container at room temperature or freeze for longer storage.
