Instructions

Instructions

  • In the bowl of a stand mixer fitted with dough hook (or a large bowl), dissolve yeast in milk and allow to sit for about 5 minutes until bubbly.
  • Beat in baking powder, sugar, salt, and cinnamon until combined. Add flour a cup at a time until your dough comes together. Cover and let rise for 1 hour.
  • In a large frying pan over medium high heat, add apples and about 1 inch of water. Cook until softened (8–10 minutes). Add sugar, salt, nutmeg, ginger, cinnamon and cook until most liquid evaporates. Let cool.
  • Fold cooked apples into risen dough using spatula or hands. Divide dough into 15 pieces, flatten slightly on parchment-lined tray.
  • Heat oil in wok, dutch oven, or deep fryer to 350°F (180°C). Fry a few fritters at a time, about 2 minutes per side, until golden brown. Drain on paper towels.
  • Whisk powdered sugar and milk together for glaze. Add vanilla, maple syrup, salt, and cinnamon and mix until smooth.
  • Dip warm fritters in glaze and place on wire rack to let excess drip off. Serve immediately.

Notes

If dough is too sticky, gradually add more flour. You can refrigerate dough overnight. Refrigerated fritters last up to 3 days or freeze for longer storage. Reheat in toaster oven or air fryer for best texture.
