Ingredients

  • 1 ½ cups apple cider fresh pressed (not vinegar)
  • 6 tablespoons butter softened
  • ¾ cups sugar
  • 1 egg large
  • 1 ½ cups gluten free 1 to 1 baking flour I use Bob's Red Mill
  • 1 ½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • salt dash
  • 2 tablespoons butter melted for topping
  • ½ cup sugar for cinnamon sugar coating
  • 1 tablespoon cinnamon for cinnamon sugar coating

  • Preheat your oven to 350°F and grease your donut pan well.
  • Simmer apple cider in a saucepan over medium heat until reduced to ½ cup, then set aside to cool.
  • Cream softened butter and sugar in a large bowl until light and fluffy.
  • Add the egg and beat until combined, then mix in the reduced apple cider.
  • In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  • Gradually stir dry ingredients into the wet mixture just until combined.
  • Spoon the batter into the greased donut pan, filling each about ¾ full.
  • Bake for 15 minutes, or until a toothpick inserted comes out clean.
  • Cool donuts in the pan for 5 minutes, then transfer to a wire rack.
  • Brush the warm donuts with melted butter.
  • Dip or sprinkle with cinnamon sugar mixture and serve warm.

Notes

You can coat the donuts with cinnamon sugar, powdered sugar, or leave plain. Want to spice it up? Add a pinch of cloves or chopped apples to the mix. Store donuts in an airtight container for 2 days or refrigerate up to a week. Freeze individually wrapped for longer storage. Reheat in oven or microwave with a damp paper towel.
