Gluten Free Garlic Chicken Lasagna

Ingredients
  

  • 12 pieces gluten-free lasagna noodles
  • 2 cups cooked chicken, shredded
  • 3 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • ¼ cup fresh basil, chopped for garnish, optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring water to a boil and cook the gluten-free lasagna noodles according to package directions. Drain and set aside.
  • In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  • In a mixing bowl, combine the shredded chicken, ricotta cheese, Italian herbs, salt, and black pepper. Mix well until all ingredients are incorporated.
  • Spread a thin layer of marinara sauce at the bottom of a 9x13-inch baking dish.
  • Layer 4 gluten-free lasagna noodles over the sauce. Follow with half of the chicken mixture, half of the mozzarella cheese, and a third of the remaining marinara sauce.
  • Repeat the layers using 4 more noodles, the remaining chicken mixture, the remaining mozzarella cheese, and half of the marinara sauce.
  • Finish with the last 4 noodles, the rest of the marinara sauce, and sprinkle the grated Parmesan cheese on top.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and bake for another 20 minutes, or until the cheese is bubbly and golden.
  • Remove from the oven and let it rest for 10 minutes before slicing. Garnish with fresh basil if desired.

Notes

Ensure all ingredients, including sauces and cheeses, are labeled gluten-free.
You can customize the filling by adding sautéed vegetables or spinach for extra nutrition.
This lasagna can be prepared in advance and refrigerated or frozen before baking. If frozen, add extra baking time when cooking.
