  • 1 pound ground chicken fresh and lean
  • ¼ cup diced red onion
  • 3 garlic cloves minced
  • ¼ cup sun-dried tomatoes finely chopped
  • 1 cup baby spinach loosely packed, roughly chopped
  • 1 tablespoon chopped fresh dill
  • 2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoon extra virgin olive oil

  • Combine ground chicken, onion, garlic, sun-dried tomatoes, spinach, dill, oregano, salt, and pepper in a mixing bowl.
  • Shape into 4 equal patties.
  • Heat olive oil in skillet on medium. Cook patties 5–6 min per side until browned and cooked through.
  • Place browned patties into pressure cooker with ½ cup water or broth. Seal and cook on high pressure for 8 minutes.
  • Let slow release for 5 minutes, then serve immediately.

Notes

Use butter lettuce for a low-carb wrap. Freeze leftovers in single layers, defrost overnight for best results.
