Combine ground chicken, onion, garlic, sun-dried tomatoes, spinach, dill, oregano, salt, and pepper in a mixing bowl.
Shape into 4 equal patties.
Heat olive oil in skillet on medium. Cook patties 5–6 min per side until browned and cooked through.
Place browned patties into pressure cooker with ½ cup water or broth. Seal and cook on high pressure for 8 minutes.
Let slow release for 5 minutes, then serve immediately.
Notes
Use butter lettuce for a low-carb wrap. Freeze leftovers in single layers, defrost overnight for best results.
