Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice About 2 lemons
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 piece lemon zest Zest of 1 lemon
  • to taste none fresh parsley, chopped For garnish

Instructions
 

  • In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, paprika, and lemon zest until combined.
  • Place the chicken breasts in a baking dish or oven-safe skillet. Pour the marinade over the chicken, ensuring it is well coated. Cover with plastic wrap or a lid and let it marinate in the refrigerator for at least 30 minutes or up to 4 hours for more flavor.
  • Preheat your oven to 400°F (200°C).
  • Remove the chicken from the marinade and place it in the preheated oven. Bake for about 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  • Once cooked, remove the chicken from the oven and let it rest for 5 minutes.
  • Garnish with chopped fresh parsley before serving.

Notes

Serve the chicken with a side of Greek salad, rice pilaf, or roasted vegetables for a complete meal.
You can also grill the chicken instead of baking for a smoky flavor.
Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
