Ingredients
  

  • 2 cups cooked chicken breast, diced
  • 1 cup plain Greek yogurt
  • ½ cup celery, chopped
  • ½ cup red grapes, halved
  • ¼ cup chopped red onion
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 slices whole grain bread
  • Lettuce leaves for garnish (optional)

Instructions
 

  • In a large mixing bowl, combine the diced cooked chicken breast, Greek yogurt, chopped celery, halved red grapes, and chopped red onion.
  • Add the Dijon mustard, lemon juice, garlic powder, and season with salt and pepper. Mix thoroughly until all ingredients are well combined.
  • Taste and adjust seasoning if necessary.
  • To assemble the sandwiches, layer the chicken salad mixture onto four slices of whole grain bread. If desired, add lettuce leaves for extra crunch and freshness.
  • Top with the remaining four slices of bread to close the sandwiches.
  • Cut the sandwiches in half if preferred and serve immediately.

Notes

You can substitute the chicken with canned tuna or chickpeas for a different twist.
Feel free to customize the veggies based on your preference; cucumbers and bell peppers work well too.
These sandwiches can be made ahead of time and stored in the refrigerator for up to 2 days. Just keep the bread separate until ready to serve to maintain freshness.
