  • 1 pound boneless chicken thighs
  • ⅓ cup + 3 tablespoons dijon mustard
  • ¼ cup + 2 tablespoons honey
  • 2 to 3 tablespoons olive oil
  • kosher salt to taste
  • black pepper to taste
  • 4 cups broccoli florets
  • garlic powder for seasoning
  • chives for garnish

  • Whisk together dijon mustard and honey in a small bowl until blended smooth.
  • Season chicken thighs with kosher salt, pepper, and garlic powder.
  • Pour half of the honey mustard sauce over the chicken and marinate for at least 15 minutes.
  • Toss broccoli florets with olive oil, salt, pepper, and garlic powder.
  • Preheat grill or grill pan to medium heat.
  • Grill chicken for 6 to 7 minutes each side until cooked through with char marks.
  • Grill broccoli for 5 to 7 minutes, turning occasionally until tender with char.
  • Remove from heat and slice chicken into strips.
  • Drizzle remaining honey mustard sauce over the chicken and broccoli.
  • Sprinkle with chopped chives and serve.

Notes

Store leftovers in separate airtight containers. Reheat chicken gently and give broccoli a quick sauté or microwave with a splash of oil to refresh.
