Heat olive oil in a large skillet over medium heat. Once hot, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they start to soften.
Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to prevent burning.
Add the ground beef to the skillet. Season with salt, pepper, smoked paprika, and cumin. Cook until the beef is browned, about 5-7 minutes, breaking it apart with a spatula as it cooks.
Add the diced sweet potatoes to the skillet and stir well to combine. Pour in the beef broth, making sure the sweet potatoes are submerged.
Cover the skillet with a lid and reduce the heat to medium-low. Let it simmer for about 15 minutes, or until the sweet potatoes are tender, stirring occasionally.
Once the sweet potatoes are cooked, remove the lid and let any excess liquid evaporate for 2-3 minutes if necessary.
Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
For additional flavor, consider adding red pepper flakes or a splash of hot sauce for a spicier kick.
Store leftovers in the refrigerator for up to 3 days and reheat on the stove or in the microwave.
