Ingredients
  

  • 1 pound ground beef
  • 1 cup uncooked rice white or brown
  • 1 tablespoon olive oil
  • 1 cup diced bell peppers 1 large bell pepper
  • 1 cup diced onion 1 medium onion
  • 2 cloves minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon taco seasoning
  • to taste salt
  • to taste pepper
  • 1 cup corn canned or frozen
  • 1 cup black beans rinsed and drained

Instructions
 

  • Start by cooking the rice according to package instructions, generally combining 1 cup of rice with 2 cups of water in a pot, bringing it to a boil, then reducing to a simmer, covering, and cooking for about 18 minutes for white rice.
  • While the rice is cooking, heat the olive oil in a medium skillet over medium heat.
  • Add the diced onion and bell peppers to the skillet, cooking for about 3-4 minutes until they begin to soften.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the ground beef to the skillet, breaking it apart and cooking until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the soy sauce, taco seasoning, corn, and black beans. Cook for another 3-4 minutes until everything is heated through. Season with salt and pepper to taste.
  • Once the rice is done, fluff it with a fork and divide it among four bowls.
  • Top each bowl of rice with the ground beef mixture.
  • Add optional toppings like shredded cheese, sour cream, avocado, and cilantro as desired.

Notes

Feel free to customize this recipe with your favorite vegetables or sauces. You can also use ground turkey or chicken instead of beef for a lighter option. This bowl is a great meal prep option; simply store leftovers in an airtight container in the refrigerator for up to 4 days.
