- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1 cup tortilla chips
- 1 small onion, diced
- 1 small bell pepper, diced
- 1 tablespoon olive oil
- 1 packet (1 ounce) taco seasoning mix
- 1 cup salsa
- ½ cup sour cream for serving
- ¼ cup sliced jalapeños optional
- Fresh to taste cilantro for garnish, optional
Preheat the oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for 3-4 minutes until softened.
Add the ground beef to the skillet. Cook for about 5-7 minutes or until browned, breaking it apart with a spoon.
Stir in the taco seasoning mix and ¼ cup of water. Simmer for 2-3 minutes until the mixture thickens.
On a baking sheet lined with aluminum foil (if desired), spread a layer of tortilla chips.
Spoon the ground beef mixture evenly over the chips. Pour salsa over the beef.
Sprinkle shredded cheddar cheese generously on top of the nachos.
Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.
Remove from the oven, and garnish with sliced jalapeños and fresh cilantro if desired. Serve hot with sour cream on the side.
You can customize your toppings with ingredients like black olives, guacamole, or diced tomatoes for extra flavor.
For a vegetarian option, substitute ground beef with black beans or lentils.
The nachos are best enjoyed fresh, but leftovers can be reheated in the oven for a crispy texture.
