1 grater for cheese, if desired
1 cooking spray or oil for baking
- 1 pound ground beef
- 1 teaspoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 12 pieces corn tortillas
- 1 cup shredded cheese cheddar or Mexican blend
In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.
Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
Season the beef mixture with cumin, chili powder, salt, and black pepper. Stir in half of the shredded cheese and mix well. Remove the skillet from heat.
Preheat your oven to 400°F (200°C).
To assemble the taquitos, place a few tablespoons of the beef mixture on the lower third of a tortilla. Roll tightly and place seam-side down on a baking sheet. Repeat with remaining tortillas and beef mixture.
Lightly spray the taquitos with cooking spray or brush with oil. Bake in the preheated oven for 15-20 minutes or until crispy and golden brown.
Remove from the oven and allow to cool for a couple of minutes before serving.
For extra flavor, you can add diced jalapeños or bell peppers to the beef mixture.
