Ingredients
  

  • 6 large eggs
  • 6 slices cooked ham Diced.
  • 1 cup shredded cheddar cheese
  • ½ cup bell pepper Diced, optional.
  • ½ cup green onions Sliced, optional.
  • to taste salt
  • to taste pepper
  • as needed cooking spray or olive oil For greasing.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease the muffin tin with cooking spray or olive oil to prevent sticking.
  • In a mixing bowl, crack the eggs and whisk them until well blended. Add salt and pepper to taste.
  • Stir in the diced ham, shredded cheese, and if using, the diced bell pepper and sliced green onions.
  • Pour the egg mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
  • Place the muffin tin in the preheated oven and bake for 15 minutes, or until the eggs are set and the tops are lightly golden.
  • Once cooked, remove the muffin tin from the oven and let it cool for a few minutes before running a knife around the edges to help remove the muffin cups.
  • Serve warm and enjoy!

Notes

These muffin cups can be stored in the refrigerator for up to 5 days. Reheat in the microwave for 30-60 seconds before serving.
Feel free to add other ingredients like spinach, mushrooms, or different types of cheese to customize your muffin cups.
For a lower calorie option, you can use egg whites instead of whole eggs.
