  • 2 cups shredded chicken rotisserie chicken works great
  • 64 oz. chicken or bone broth 2 boxes
  • 3 large carrots peeled and chopped
  • 3 celery stalks peeled and chopped
  • ½ onion chopped
  • 3 tsp. minced garlic
  • 1 package noodles gluten free from Aldi
  • 2 Tbsp. avocado oil for sautéing
  • 1 tsp. salt more to taste
  • ½ tsp. pepper
  • ½ tsp. turmeric

  • Heat 2 tbsp. avocado oil in your pressure cooker set to sauté mode over medium heat.
  • Add chopped onion, carrots, and celery. Sauté these veggies for 5 to 7 minutes until they start to get tender and sweet.
  • Stir in minced garlic and cook for about 1 minute until fragrant.
  • Pour in chicken or bone broth. Close lid and set to seal.
  • After pressure builds, add noodles and cook according to noodle package instructions.
  • Gently stir in shredded chicken, salt, and pepper. Set cooker to simmer and heat for 5 minutes.
  • Adjust seasoning to taste. Slow release pressure. Serve and enjoy!

Notes

Store leftovers in the fridge for 3 days or freeze for later. Keep noodles separate for best texture.
