Heat 2 tbsp. avocado oil in your pressure cooker set to sauté mode over medium heat.
Add chopped onion, carrots, and celery. Sauté these veggies for 5 to 7 minutes until they start to get tender and sweet.
Stir in minced garlic and cook for about 1 minute until fragrant.
Pour in chicken or bone broth. Close lid and set to seal.
After pressure builds, add noodles and cook according to noodle package instructions.
Gently stir in shredded chicken, salt, and pepper. Set cooker to simmer and heat for 5 minutes.
Adjust seasoning to taste. Slow release pressure. Serve and enjoy!
Notes
Store leftovers in the fridge for 3 days or freeze for later. Keep noodles separate for best texture.
