Preheat your oven to 375°F (190°C).
In a skillet over medium heat, combine the shredded chicken, diced green chiles, cumin, garlic powder, onion powder, salt, and pepper. Cook for about 5 minutes until heated through.
In a mixing bowl, mix the Greek yogurt with half of the shredded cheese and half of the enchilada sauce. Stir until well combined.
Spread a small amount of the enchilada sauce on the bottom of the baking dish to prevent sticking.
Take a corn tortilla, add a portion of the chicken mixture to the center, and a spoonful of the yogurt-cheese mixture. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
Once all enchiladas are in the baking dish, pour the remaining green enchilada sauce over the top. Sprinkle the remaining shredded cheese over the sauce.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes to allow the cheese to bubble and brown slightly.
Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired before serving.
