- 12 oz yakisoba noodles or lo mein noodles
- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 2 tablespoons green onions, chopped
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon oyster sauce optional

Cook the yakisoba or lo mein noodles according to package instructions. Drain and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat.
Add the bell peppers, zucchini, and broccoli to the skillet. Sauté for about 3-4 minutes or until the vegetables are tender-crisp.
Stir in the minced garlic and chopped green onions. Cook for an additional 1-2 minutes until fragrant.
Add the cooked noodles to the skillet. Pour in the soy sauce, sesame oil, and oyster sauce (if using). Toss everything together until the noodles are well coated and heated through, about 2-3 minutes.
Taste the dish and add salt and pepper as needed.
Remove from heat and serve the hibachi noodles hot, garnished with toasted sesame seeds if desired.
You can customize the vegetables based on your preferences or seasonal availability.
For protein, consider adding grilled chicken, shrimp, or tofu to the dish.
