Ingredients
  

  • 1 pound ground beef
  • 2 cups diced potatoes About 4 medium potatoes.
  • 1 cup chopped onion About 1 medium onion.
  • 1 cup frozen mixed vegetables Like peas, carrots, and corn.
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ cup water

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  • Add the chopped onion to the skillet and sauté for about 5 minutes until softened.
  • Stir in the diced potatoes and frozen mixed vegetables, mixing well.
  • Add the garlic powder, salt, black pepper, and paprika to the mixture, stirring to combine.
  • Pour in the condensed cream of mushroom soup and water, mixing until everything is evenly coated.
  • Transfer the beef and vegetable mixture to a greased 3-quart baking dish, spreading it out evenly.
  • Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  • Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Feel free to customize the vegetables based on your preferences or what you have on hand.
You can substitute the cream of mushroom soup with cream of chicken or any other cream soup.
This casserole can be made ahead of time and stored in the refrigerator before baking; just add an extra 10-15 minutes to the cooking time if baking from cold.
Serve with a side salad for a complete meal.
