Heat the olive oil in a large pot over medium heat.
Add the diced onion, carrots, and celery to the pot. Sauté for about 5-7 minutes, or until the vegetables are softened.
Stir in the minced garlic and cook for an additional minute until fragrant.
Place the chicken breasts in the pot and add the chicken broth, thyme, oregano, bay leaves, salt, and pepper. Bring to a boil.
Once boiling, reduce the heat to low, cover, and let simmer for about 30 minutes, or until the chicken is fully cooked.
Remove the chicken breasts from the pot and shred the meat with two forks. Return the shredded chicken to the soup.
If you’re using egg noodles, add them to the soup and cook according to package directions, usually about 8-10 minutes.
Stir in the frozen peas if using and allow to heat through for about 5 minutes.
Taste and adjust salt and pepper as needed. Remove the bay leaves before serving.
Ladle the soup into bowls and garnish with chopped fresh parsley if desired.
