Equipment

  • 1 Mixing bowl for eggs and crumbs
  • 1 Heavy pan for frying
  • 1 Slotted spoon for removing sticks from oil

  • 16 oz whole milk mozzarella cheese cut into sticks
  • 3 large eggs whisked with salt
  • 3 cups Italian style bread crumbs for double coating
  • Salt to taste
  • Tallow or deep frying fat for frying

  • Cut mozzarella into sticks around ¾ inch thick and 3 inches long.
  • Whisk eggs with a pinch of salt in a bowl.
  • Roll each mozzarella stick in egg wash, then coat in breadcrumbs. Repeat for a second coat.
  • Place on parchment-lined tray and freeze for 120 minutes.
  • Heat fat in a deep pan to 350°F (175°C).
  • Fry sticks in small batches for 1-2 minutes until golden and crisp.
  • Drain on a paper towel-lined plate.
  • Serve hot with marinara or your favorite dipping sauce.

Notes

Freeze coated mozzarella sticks at least 2 hours before frying. Reheat leftovers in oven at 375°F to restore crisp.
