Preheat oven to 375°F to get ready for baking the cobbler.
In a mixing bowl, combine flour, half the sugar, baking powder, and salt. Add milk and stir until just combined.
Pour melted butter into a 9x13 inch baking dish. Pour the batter over the butter. Do not stir.
In a saucepan over medium heat, cook the peaches with remaining sugar, lemon juice, and cinnamon for 3 to 5 minutes until juices thicken.
Spoon peach mixture evenly over the batter in the baking dish. Do not stir.
Bake in the oven for 35 to 40 minutes until golden on top and a toothpick comes out clean from center.
Let the cobbler cool slightly before serving warm, optionally with vanilla ice cream.
Notes
Serve warm with vanilla ice cream and store leftovers in the fridge for up to 4 days or freeze up to 2 months.
