  • 2 pounds chicken breast cut into bite-sized pieces
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 cup BBQ sauce
  • ¼ cup honey
  • 1 cup long grain rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 head romaine lettuce chopped
  • ½ cup shredded cheddar cheese
  • ¼ cup pickled onions
  • ¼ cup chopped cilantro
  • ¼ cup ranch dressing

  • Preheat your oven to 400°F.
  • Cut the chicken breasts into bite-sized pieces and toss them with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
  • Spread the chicken out on a parchment-lined baking sheet and bake for 20-25 minutes until cooked through and browned.
  • Cook the rice according to package instructions.
  • In a small saucepan over low heat, warm BBQ sauce and honey until smooth and heated through.
  • Toss the baked chicken pieces in the honey BBQ sauce until coated.
  • Warm the corn and black beans.
  • Assemble bowls with a scoop of rice and romaine lettuce.
  • Add BBQ chicken, then black beans and corn on top.
  • Top with cheddar cheese, pickled onions, chopped cilantro, and a drizzle of ranch dressing.

Notes

For a faster version, use rotisserie chicken and pre-cooked rice. Keep fresh toppings separate if storing for later.
