Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easier cleanup.
In a mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, milk, egg, minced garlic, onion powder, salt, pepper, and dried oregano. Mix until just combined, being careful not to overmix.
Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 15-20 minutes, or until they reach an internal temperature of 165°F (74°C).
While the meatballs are baking, prepare the honey garlic sauce. In a small saucepan, combine honey, soy sauce, minced garlic, cornstarch, and water. Cook over medium heat, whisking continuously until the mixture starts to thicken, about 2-3 minutes.
Once the meatballs are done, remove them from the oven and transfer them to the saucepan with the honey garlic sauce. Toss to coat the meatballs evenly.
Serve the meatballs hot, over rice or in a sub, drizzled with extra sauce if desired.
