Prepare the carrots by rinsing them under cold water and trimming the ends if necessary.
In a medium saucepan, add the baby carrots and cover them with water. Bring the water to a boil over medium-high heat.
Once boiling, reduce the heat to medium and simmer the carrots for about 5-7 minutes, or until they are tender but still slightly crunchy.
Drain the carrots and return them to the saucepan.
Add the butter, honey, salt, black pepper, and dried thyme to the saucepan with the drained carrots.
Cook over medium heat for an additional 3-5 minutes, stirring frequently, until the carrots are well coated and the honey mixture has thickened slightly.
If desired, stir in the fresh lemon juice for an added touch of brightness.
Transfer the honey-glazed carrots to a serving dish and serve warm.
