Ingredients
  

  • 1 pound baby carrots
  • 3 tablespoons honey
  • 2 tablespoons unsalted butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme Fresh thyme can also be used for a more aromatic flavor.
  • 1 tablespoon fresh lemon juice Optional for added brightness.

Instructions
 

  • Prepare the carrots by rinsing them under cold water and trimming the ends if necessary.
  • In a medium saucepan, add the baby carrots and cover them with water. Bring the water to a boil over medium-high heat.
  • Once boiling, reduce the heat to medium and simmer the carrots for about 5-7 minutes, or until they are tender but still slightly crunchy.
  • Drain the carrots and return them to the saucepan.
  • Add the butter, honey, salt, black pepper, and dried thyme to the saucepan with the drained carrots.
  • Cook over medium heat for an additional 3-5 minutes, stirring frequently, until the carrots are well coated and the honey mixture has thickened slightly.
  • If desired, stir in the fresh lemon juice for an added touch of brightness.
  • Transfer the honey-glazed carrots to a serving dish and serve warm.

Notes

Fresh thyme can also be used instead of dried for a more aromatic flavor.
For a variation, you can add a pinch of cinnamon or top the carrots with chopped walnuts for added texture.
This dish pairs well with roasted chicken or pork.
