Preheat your oven to 375°F (190°C) or prepare a grill.
In a small saucepan over medium heat, combine the honey, soy sauce, Dijon mustard, rice vinegar, minced garlic, and grated ginger. Whisk the mixture until it's well blended and bring it to a simmer.
Allow the glaze to simmer for about 5 minutes, stirring frequently, until it thickens slightly. Remove it from the heat.
Season the salmon fillets with salt and pepper on both sides.
Place the salmon fillets in a baking dish or on a grill. Brush a generous amount of the glaze over each fillet.
For baking: Place the dish in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. For grilling: Cook for about 5-6 minutes on each side, brushing with the glaze during the last few minutes of cooking.
Once cooked, remove the salmon from the oven or grill. Brush with any remaining glaze and let it rest for a minute.
Serve garnished with chopped green onions if desired.
